My friend Kelly gave me this fabulous recipe. We are all quite addicted.
Twice As Nice Popcorn
3/4 cup unpopped popcorn (not microwave popcorn)
3/8 cup vegetable oil
1 cup packed light brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup white chocolate chips
1 cup milk chocolate chips
Pour popcorn and oil into 4qt Dutch oven. Tilt Dutch oven to spread popcorn evenly. Cover and cook over medium-high heat until 1 kernel pops; remove from heat. Let stand 1 minute, then return to heat. Cook, shaking pan occasionally until popcorn stops popping. Immediately pour into large roasting pan, very large bowl, or divide popcorn between 2 ungreased rectangular pans.
Heat oven to 200. Heat butter, brown sugar, corn syrup and salt in 2qt saucepan over medium heat, stirring occasionally until bubbly around edges. Continue cooking 5 minutes without stirring; remove from heat. Stir in baking soda until foamy. Pour sugar mixture over popcorn; toss until evenly coated. If using bowl, transfer mixture to roasting pan or rectangular pans. Bake 1 hour, stirring every 15 minutes. Spread on aluminum foil or cooking parchment paper.
Follow package directions to melt white chocolate and then milk chocolate. Drizzle over popcorn. Allow to cool completely so chocolate will harden.
