What’s better for creating meaningful conversation than a tummy-filling, soul-warming meal?
As the seasons change and the weather cools, my shoulders cozily curl forward toward home-cooked meals paired with crusty breads. Today. I’d like to share one of my favorite go-to suppers to serve. This meal stretches and can be changed up to suit your fancy. It’s also great for a busy day because you can drop it in your crock pot on your way out the door and come home to an effortlessly aromatic dinner to enjoy.
- 1 Chuck Roast
- 1 Envelope Hidden Valley Ranch Mix
- 1 Envelope McKormick Dry Au Jus Mix
- 1/2 Block of Cream Cheese
- 1 Stick of Butter
- 3-4 Pepperoncinis
- Optional: Potatoes, Carrots, Celery, etc.
Place any vegetables in the crock pot, add chuck roast, sprinkle with seasoning packets, place butter and cream cheese atop roast. Do NOT add water. Cook on low for 7-8 hours.
I love to serve this roast with carrots in the crock pot, homemade mashed potatoes with sour cream and garlic salt, crusty bread, and a big green salad. We doubled this recipe and served 7 students and our family last week! There was not a morsel of meat leftover.
Side note: I just learned a genius meal planning tip from one of my favorite bloggers. If you add what you’re serving for supper that night to your iphone calendar and set a monthly reminder, you’ll already have meals planned ahead of time! BRILLIANCE.
Lastly, I wanted to leave you with a Hurdle family favorite conversation starter. We started using it when we first got the kids and it helped both of them identify emotions and talk about things we had no idea that were going on in their little minds! We use this icebreaker nearly every evening and I am always excited to see what they have to share. Whomever answers the question gets to choose the next person to answer. This gives a little added incentive for my kiddos when they just aren’t in the mood to talk.
So…”What made you mad, or glad, or sad, today?”
