Hostessing above average

This week we have had not 8, not 20-some, but a grand total of 54 people in our home during our Monday-Friday work week! Plus, this weekend my sister is coming to visit and boys are watching college football here all day! Just thought that would provide a good laugh to those of you who participated in Freebie Friday a few weeks ago.

Here are a few Bible Study girls learning to cook Poppyseed Chicken and then sitting down to enjoy it!

Boil 4-6 Chicken Breasts, then cut into small pieces. Mix together a can of Cream of Mushroom, Cream of Chicken and 15 ounces of Sour Cream (I went with fat free). Melt 2 Tbsp of Butter and mix into 1 and a half sleeves of crushed Ritz Crackers add 2 Tbsp of Poppyseeds. Layer chicken, creamy mixture and then add crunchy topping. Bake at 350 for 20-25 minutes. YUMMY!

(This portion fed 9 adults. But, the next night I doubled the recipe and put it in a 9×13, loaf pan and 9×9…fed 13 girls w/ the 9×13 and loaf pan. I saved the 9×9 for a girl in our Sunday School class that just had a baby and our class is providing meals for! Jason Dewar and Joel Hurdle always tell me to work smarter not harder.)

On a lighter note…

I wanted to share w/ ya’ll some of the things we like to do when we aren’t on campus…there aren’t too many hours left in the day… but two things we like to do are cook and entertain!

Here’s the giant turkey we cooked for 30 Greek students that came for Thanksgiving! People say, “don’t use a new recipe when company comes over….” but, we don’t have any old ones!

I am a Domestic Diva-wannabe. So, this week I tried to cook themed dinners. Here is our “Night in New Orleans” with cajun mahi-mahi, red beans and rice plus veggies. We had “Double Decker Tacos” for our Mexican night and then some yummy Asian fare.
