Fresh, Healthy & Delicious Recipe!

I had to share this amazingly delicious recipe that we tried out tonight! It’s a perfectly refreshing summer supper after a hot and humid day.

The quote that affirmed I should post this recipe was, “Wow.  I’m not much of a salad guy but I would order this at a restaurant!”

Thai Stir Fry Chicken Salad

Dressing:

3/4 cup creamy poppy seed dressing

2 garlic cloves, pressed

1 1-inch unpeeled fresh ginger root, grated and juiced

Salad:

1 package fresh baby spinach leaves

1 package broccoli slaw mix

1 medium cucumber, scored, seeded and sliced

1 small red bell pepper, sliced into thin strips

Chicken Mixture:

1 pound boneless, skinless chicken breasts, flattened and cut into cubes

1/4 cup snipped fresh basil leaves

1/4 cup peanuts, chopped

  1. For dressing, in stainless mixing bowl, combine, salad dressing and garlic. Grate ginger root. Gather ginger root in your hand and squeeze over bowl to release juice. Whisk and set aside.
  2. For salad, place spinach, slaw mix, cucumber and bell pepper; refrigerate until ready to serve.
  3. For chicken mixture, heat stir fry or skillet in a single layer. Cook without stirring 2 minutes or until chicken begins to brown. Stir-fry 2-3 minutes or  until chicken is no longer pink; remove from heat. Add basil, peanuts and 1/4 cup of the dressing; toss to coat.
  4. To serve, toss salad with remaining dressing, top with chicken mixture and serve immediately.

Yield: 8 servings

Sweet and Sour Pork

Pork isn’t my favorite type of meat. However, we found it on sale last week, so I needed to find a way to make it yummy! I went to www.recipematcher.com which is a web site where you type in the groceries you have and they list out all the meals you can make with what’s in your kitchen! I love this site! Here’s what it came up with. It was so easy and so cheap because we used what we had!

Sweet and Sour Pork

1/4 cup honey

1/4 cup soy sauce

1/4 cup chili sauce

4-6 pork chops

Mix honey, soy and chili sauce. Place chops in a 3-quart casserole dish that has been sprayed w/ cooking spray. Cover with mixture. Bake at 350 for 45 minutes. It is so easy and delicious!

I paired it with rice, a bed of spinach, fresh tomatoes and cubes of mozzarella cheese with a balsamic, oregano and basil dressing. Hope you enjoy today’s recipe! I think we will do desserts next week…let me know if you have a newlywed friendly dessert recipe that you would want to share. :)
