I have been majorly struggling with cooking recently. I have NOT been struggling with baking…but, cooking well-balanced, healthy meals? Struggling.
In attempts to do this…I am blogging my meal-planning so each night I can just click and cook…and it provides good accountability!
Side note–I saw this great idea on Better Homes & Gardens via Pinterest, just put all the ingredients for meals in small bins and you’re ready to go! Hello? Genius.
Sunday: Chili with Ground Turkey, Salad, Jim N’ Nicks Cheesy Biscuits (freeze leftovers)
Tuesday: Pot Roast with Carrots, Potatoes, Mushrooms, Celery, Salad, Artisan Wheat Bread
Wednesday: Chicken Tortilla Soup,
Thursday: Grilled Trout, Baked Sweet Potatoes, Salad, Roasted Veggies
Friday: LAKE HOUSE W/GIRL FRIENDS!!! (Need to have some additional freezer meals for Joel)

My doctor’s visit went so well, thank you to those who prayed for me. Dr. Porter said my bone was growing back very nicely and would be 100% in 10 more months. Great progress. Hope you have a great week!!
